Or better yet, a month in primary, skip the secondary and go straight to bottle conditioning for 3 weeks! Bet your beer beats your friends beer hands down!
So you can lay down next to the carboy and watch your delicious brew clearing up, aging and be able to talk to it. But like you mentioned, a secondary is completely unnecessary, unless your adding fruit or what not.

Perhaps even more patience? Either a long primary or 1-2 weeks in primary, 2 weeks in secondary and then bottle condition for 3 weeks. Dont waste all the time spent laboring and loving over your brew pot by being impatient. The longer it sits and ages, the better it will be. Dont just make beer...
I know for some its a sin but the company "All American Containers" - which has several locations all over the country sells a case of beer bottles (24/case) for 7.00 which i think is a great deal! New, clean and no labels.

So, I am not sure when it started, but officially my new brew has started bubbling at 20 hrs. I pitched the yeast straight from the packet instead of rehydrating it, so i think thats pretty good. Im so excited Ill prob start another batch in couple weeks!

There should even be a note on the instruction sheet that talks about why they use 2.5 gallons and what would happen if you used more or less. i know my Brewers best Red Ale did,

I totally agree. Since brewing the extract kits is all laid out for us, i was gonna wait till i stopped buying kits to make a log, but starting a log now may be a good idea! Thanks
