    First full-boil extract attempt in a day or two...

    I've done 3 full boils now. Best result I had was to start with 6g of water, ended with 5g (almost on the nose) after boil off.

    Sounds good, should be quite gingery :) I bet it could use some clove and cinnamon as well, a nice holiday cider. The thing with cider is, even when it's bad it's still pretty damn good.

    cider flavoring ideas

    I've made ginger cider before -- delicious. Think about 3 tbs/gallon of grated ginger would be good. Also think about maybe pumpkin/apple pie spice, cloves, cinnamon, nutmeg (be easy with this one), cardamom. Also, you can try orange peel. I haven't tried this yet but we used to make hot...

    Nope, ambient temps were around 72 deg F. Saflager worked just fine.
