    Wyeast 3711 appreciation thread

    Your may 4th saison is almost exactly how mine went. But after almost three weeks in the bottle, the beer is way, way too strong to drink. It's going to need some serious time to settle down, flavor- and alcohol-wise. Love 3711, but next time I use it, I'll lower the OG.

    Hey everyone, I made essentially this beer recently, and it's been in bottles for just about three weeks. Should I crack some open, or does it improve significantly after a few more weeks of conditioning?

    Beer styles at 72-75 degree fermentation temperature

    Hi everyone, I'd like to brew something soon, but can't guarantee my fermentation temperatures lower than 72-75. I can chill my wort to 60-65, but upon pitching, it will rise to the above temp. What styles would this situation work with? Saison for sure. Any others?

    American IPA Ithaca Flower Power Clone

    Right at about three weeks, and I must say, this is an excellent beer. It's a bit darker than the real flower power, but the aroma is excellent (lots of tropical fruit and flowery citrus) and the taste is very good. There're some tweaks to be made but I think this is a good start for those...

    What I did for beer today

    Bottled what was to be a full batch of saison... until the bottling bucket fell over, dumping ~2 gallons of saison onto the floor. Ugh.

    American IPA Ithaca Flower Power Clone

    American IPA Ithaca Flower Power Clone

    Tasted a bottle of the late hop FP after only about 10 days carbonating. It's got some carbonating to do, but the honey and hops are lovely. I'd recommend this brew to anyone.

    This, as well as the original recipe, look very interesting. To those who've tried this, to what extent is it similar to Tank 7? American hops, saison yeast, etc.

    Interesting. I see Flying Dog Raging ***** often calls for WLP400. Perhaps 410 would work there as well.

    These are the yeasts I have harvested and available in the fridge. Does anyone have experience making a belgian IPA with either of these? Enjoyable commercial examples include New Belgium's Belgo IPA, Piraat, and Houblon Chouffe (with Wyeast 3522, I know). Knowing these, would one work best...

    What I did for beer today

    Managed to brew a rye saison. Partial mash on stovetop; but had the largest BIAB grain bill I've used (8.5 lbs or so). Took some time to get the grains to give up the wort, but hopefully it worked out. Pitched @ 70 with Wyeast 3711.
