So we end up with a grain bill like this:
20lbs English Pale Malt
1lb 120L Crystal Malt
1lb Chocolate Malt
.5lb Crystal 60
2lb honey

We have brewed a Spruce Porter with an og of 1.060 and so far have a fg of 1.048. Fermentation seemed to come to an end after 7 days, we got the same fg reading at 13 days and repitched the yeast and at day 20 the gravity reading was still 1.048. The problem is we planned to have a fg of 1.016...
I've never made a Lambic and don't think I've ever had one. But I have lots of pears and would like to make one.
