    Sounds good. Amarillo are some good hops. I've used them a couple times. Very citrusy, like cascade, but a little more like orange than grapefruit, in my opinion anyway.

    Can't help with yeast question, I've never used those strains, sorry. But pounds of sugar should be added during the boil or at flame-out while the water is still hot enough to dissolve them. And as for priming sugars, I just stick with 3/4Cup unless you want more carbonation.

    Ales seem to do. Best at, or just below room temps. Your yeast packet should tell you the ideal temp for that strain. But generally anything roughly 65 to 75 should work fine.

    Thanks everyone for such a great welcoming. I heavnt checked in for a couple days and this thread really blew up. I too was not born here in Texas either. I got my start as a yankee, just north of Philly. But like the old saying goes, I got here as fast as I could.
