I think I might be allergic. Every time I'm around fresh cut onions, I start having an allergic reaction w/ my eyes turning red and watering profusely..oh, the horror!! :eek: Actually, I used to hate onions as a kid, but I eat 'em all the time on most anything now.

What kind of temperature? If I under pitch a little and have the temperature a bit low, the airlock activity is very slow - but, slow is better than none.

If you're smoking that long, I'd definitely follow the cheesecloth method mentioned in the above link. Otherwise, I think skin will suffer too much. Also, I use tenderquick in the brine to be more on the safe side. At this point, I hope you already have it soaking away in the brine...

Would a portable GFCI plug work? If you're in an apartment, how can you run 30 amp service or do any electrical work w/out their sign-off (which I would think is not going to happen).
