Looks great! My only concern is the one wire plugs; they will/do short out wires when you insert/remove them. XLR three wire type is a great replacement just a bit more $$

SSH is used to connect to a shell on the RaspPi, using windows PuTTY is a great application for it. OSX's terminal app is good there. Java is a perfectly acceptable platform to work with on the raspi. if thats what your comfortable with. http://learn.adafruit.com/category/raspberry-pi...

another thing.. try reversing the wires. K type will read somewhat ok at room temp'ish and totally wig out when going up or down. I have a few pairs here that the colour is wrong on the wires. so it seems to be not so uncommon.
