    50 gallon kettle - options?

    Keep in mind that it might be more due to heat loss to the atmosphere (through the kettle wall and off the surface of the liquid). Would an element that size be able to actually boil that much water though? Boiling is different and takes more energy than just getting it to boiling temperature...

    That's completely legitimate and if it works for you then great. We all have different risk tolerances and different compromises we're prepared to make. Cheers!

    It isn't pressure cooked. It's exactly the same. It's also stored on the shop floor. pH is exactly as it would be otherwise. And at least two providers in Australia have food safe certification for them. The no-chill botulism thing has been done to death so I don't propose to go over it here...

    I no-chill - straight into a cube. Saves time on brew day and let's me stock pile cubes, so I brew whenever I have the chance (not as often as I'd like) and just pitch yeast/ferment whenever suits my pipeline.

    Does anyone have reports on drinking this younger than the recommended 4 months? I definitely want to try this but if it really does need the 4 months then that will impact my pipeline so I'll have to do it next weekend as opposed to today...

    I followed the recipe except I scaled it down to 11 litres. The only change was Maris Otter for the base.

    I brewed this and opened my first bottle this past weekend - it's without a doubt the best beer I've ever brewed - been brewing for about 6 years (but admittedly only really frequently this year). I'm actually really upset that I only brewed 11 litres because I'm pretty sure it'll all be gone...
