    Fermentation help needed

    Its possible that you under pitched. 1.098 is a pretty high gravity and usually you need a couple liters of starter or multiple yeast packs. Check www.mrmalty.com/calc/calc.html and see how much yeast you need. Temperature could also affect the yeast if allowed to drop low enough but I doubt...

    Bleach as sanitizer?

    I also used bleach due to the cheap price. I never rinsed it, I just made sure there was no liquid left and I haven't noticed any off flavors yet. However I just upgraded to star san and it seems to work very well. Star san does not cost very much if you use a spray bottle.

    Sometimes you can hit a "hotspot" that will go away with mixing, but that seems pretty high.

    Monster Mill 2 Crush?

    I use my MM2 at the default 45 setting and double mill. I'm not sure how much the double milling affects the efficiency but I get around 80%. Seems like many people have their mill gap set much lower. May need to try 40 and see if I can get around 85% efficiency.

    Best water solution

    I got the deluxe model which comes with a dual inline TDS meter and a pressure gauge. It seems to work great! It gets the TDS down to around 1-2 out of the RO membrane and then down to 0 after the DI resin bed. I bought some bulk Calcium Chloride from BRS. It says its pharmaceutical grade but...
