I added magnets where the edges of my reflectix meets. Just click them together. I used the reflectix foil tape to seal all my edges up. We dont boil with it on, so not sure how tape would hold up.

We have the same controller and have no issues. I use a seperate thermometer as well for exact mash temps and they match up. Sounds like your probe is bad. Email them, they are pretty good when emailing abut technical stuff.

Check ebay. There is a couple of sellers offering cans with free shipping for the 16.9oz Cannular cans, they may have the shorter 16oz the SL-1 uses. They are $99 for 207 with lids free shipping. You may be able to uses these same cans with some adjustment/modification to the SL-1 table.
