True about the success as a teacher, and sorry to hear about your misfortune with the cherry beer. I made a cherry beer this summer and I only used the cans of Oregon cherries with juice. About 7 cans to be exact and it had a good cherry flavor, not exactly sweet though.

Yea I am going for a kick you in your arse malt assault, and at 10% of the bill the roasted/dark malts I think will be pretty level with the rest. I am also going to boil 3 oz of 12.5 Chinook so that will also blend with the dark malt flavor. At least that's the plan :rockin:

Ok Im thinking I may just go with the 05. I originally had a pound of victory in there as well, but I took it out to see what this will taste like and not confuse it all. Would you use two packets of 05?

What yeast did you use and/or plan on using again? I honestly felt that the WLP 007 was better for the brew that the San Diego Super that i tried on the first go round.

I pitched yeast on Sunday and theOG was 1.067 so pretty close to what i was shooting for. Brings my efficiency to 69% though so I have some figuring to do next go round. I pitched the 1056 and it began bubbling in about 5 hours :) Now it's going strong. I'll let yall know if anything happens...
