H big a role does headspace play in a starter? I've always just boiled 1/4-1/2 c dme in 2 cups water for 15 mins and threw it in a sanitized 2L growler. Is that too big of a vessel? Should I use a 1L growler?

That's exactly the point of knowing the attenuation of the yeast. If you have to manually stop the yeast, to hit a certain gravity without going past it, then you need to get a yeast that doesn't attenuate as much. So that you do not have to "manually stop" a beer. It's just another "beer...

If I were you and really worried about it, I would just wait to brew. But if you can't, then everyone else is right, unless you have a super high O.G., all fermentation will be done in a few days.
