    Starting fermentation speed and nutrients

Thanks for the response. The yeast nutrient is a small bag of coarse white granules sold in bulk, so unfortunately I don't know offhand exactly what it is. It seems I missed some juice in the cleanup and spread it around while walking. The kitchen floor is sticky all over the place. Bah!

    Starting fermentation speed and nutrients

Yesterday I started a one gallon batch of mead with 2.5 lbs of honey and a gallon batch of cider with apple juice and 17 oz of dextrose. OG of both is near 1.090. I'm using Red Star champagne yeast in both and added 1/2 teaspoon of yeast nutrient to both. It's now 22 hours later. The air...

JAOM - still very cloudy after 2 months.

I made it once and it took almost 3 months to clarify. At that point I could, as a forum member advised, read a newspaper through it. I would be patient for now. No worries on the SG. It's JOAM. You're not supposed to do anything remotely complicated. :D

How much to back sweeten a mead?

hmm... just calculated that I will have to use over 17 ounces of dextrose to get a gallon of apple juice up to 1.090. That's more dextrose than there is fruit sugar in the juice. Bad idea? I know the popular and easy apfelwein I've made from instructions on this site only uses about 8 oz of...

How much to back sweeten a mead?

Old thread, but it's asking about the same question I have. I'm getting ready to do some 1 gallon experiment batches. Tell me if this makes sense. Per this site and converting their liters to gallons, 908.5 grams of sugar in a gallon of water will yield an OG of 1090 and an abv potential of...

    Man, I love Apfelwein

This step in the recipe surprised me: "Open the packet of Montrachet Yeast and pour it into the neck of the funnel." No need to rehydrate the yeast? And thanks, Recluse. My juice is 26g of sugar and 30g of total carbs per serving. Should be fine.

What went wrong with my strawberry batches?

Well, I was careful to sanitize all the equipment. I use a no rinse sanitizer, so it's relatively idiot proof. Unfortunately, like I said, it was both gallon batches that had strawberries in them. It seems clear that the berries themselves were the problem as the plain mead came out fine. So...

    Man, I love Apfelwein

A tasty recipe that's really easy to make? Sounds great! I don't have a Sam's Club or Costco membership though, so I dropped by Walmart looking for apple juice. No "Tree Top". I got some pasteurized apple juice with ascorbic acid as the only preservative, which seems to be pretty standard...

What went wrong with my strawberry batches?

To me the aroma resembles that of the rubber stoppers. Not quite the same, but I'm definitely not getting sulfur out of it. Like I said though, it's not just the aroma. It tastes bad too. The strawberries are nowhere to be found and there isn't even much honey, if any, noticeable. Maybe it...

What went wrong with my strawberry batches?

It doesn't smell like sulfur though, at least not to me. Sorry, I don't know the gravities. Temperature would have been right around 70 degrees. A generic yeast nutrient from the brewing store was added (I say generic because they bought in bulk and sell it in plain, clear plastic bags)...

What went wrong with my strawberry batches?

(sorry for the length, just being thorough. This was my first attempt with fruit added other than JOAM and it didn't go well.) Last fall I started three one gallon batches of mead/metheglin. I racked them as needed but other only just recently got around to bottling. All three batches...

    When to rack onto fruit?

From a thread about a bandage smell/taste in someone's mead: That's it. That's the smell I started getting quite strongly as soon as fermentation got going in all three current batches. Obviously I don't know about taste yet as I just started these on Tuesday night. The honey tasted and...

    Amount of lees in batch

I believe a lot of people top it off after racking using either water if they think it's plenty sweet already or alternatively more honey dissolved in water. I'd like the experienced mead folks to comment though as I'll be looking at the same issue when I rack my current batches.

    Have I gone wrong?

If he wants something stronger could he add some more honey and if necessary repitch the yeast? Would the end result still be good? I'm getting into 1 gallon "experimental" batches and wondering what I can adjust as I go without hosing things up.

    When to rack onto fruit?

lol... now that's a mess. I looked up the chocolate mead thread here yesterday and saw again the pictures of a chocolate splat on the ceiling. :D Good news. I got home today and the strawberry mead was fine. There were no strawberries on the ceiling, floor, etc. Making room by pouring some...
