For you experienced early testers, how carbed do you expect the beer to be at one week, two weeks, etc? I just tried a beer that I bottled 11 days ago, and while there's a little carbonation, it's nearly flat. So I'm wondering if it's likely to continue developing carbonation, or if at nearly 2...

Gelatin, that sounds like a reasonable way to get repeatable results. Unfortunately, the recipe doesn't come with instructions to that level of detail. I think I'm going to have to ditch this idea. /sigh

Thanks guys! I went ahead and bottled it last night, so we'll see how it turns out in a few weeks. There was a bit of a cold snap here in Texas right when the fermenter "woke back up" so that makes sense as far as a change in temp or pressure causing the co2 to leave.
I haven't tried it yet, but I have the ingredients to make two batches of it. I'm going to brew as soon as my fermenter is available - I have their grapefruit honey ale in there now.
