Very funky Kolsch ferment - worried about bottle bombs

No, I'm not sure. I measured with my refractometer and used the calculator at onebeer to calculate and got 1.000. I probably should have used my hydrometer to get an exact reading.

Very funky Kolsch ferment - worried about bottle bombs

Hi all, Story goes like this: On December 9th I brewed my first attempt at a Kolsch (used Bee Caves excellent recipe: https://www.homebrewtalk.com/f62/bee-cave-brewery-koelsch-33548/) Hit estimated OG of 1.053 and pitched an appropriate starter of WLP029. After two weeks I took a reading...

    Belgium witbier

I've also had very good results with 2nd generation of this yeast. Harvested the cake from a witbier which fermented VERY slow. Made a starter with the harvested yeast and dumped it in a belgian dubbel with an OG of 1.072. Fermented like crazy for a week and clocked in at 1.015. Definetly a...

California Common California Common (Anchor Steam Clone) Extract and AG

Yes, I`ve tested the hydrometer, and it is accurate. There was some sweetness left, but really not overwhelming. At what gravity should I rack to secondary?

    WLP810 warm start

Hi, I just made a batch of an Anchor Steam clone. From the boil kettle, through my plate chiller and into my fermentor I got it down to 34 degrees celsius (93F) which was obviously to warm to pitch the yeast. This was late in the evening, so I placed the fermentor in my fermenting fridge...
