    Ideas for my next step?

    Next batch, Got 3.5 gallons of cider, added a gallon of water with 4.5 lbs of dissolved honey. Took a sample for SG (1.085) and a taste... AWESOME.. Saved some for the wife to try... But I also added a splash to my cup of the 1st cider to backsweeten... OMG... Now I wish I had added some honey...

    Well DUH... sometime asking a stupid question makes you think.... SG has dropped from 1.056 to 1.040.

    We have 2 gallons of fresh pressed cider that has been sitting out in the garage for about a month and a half. Temps have ranged from frozen to 60 degrees. It has a faint off odor, not sure but almost vinegary. Would you take a chance using it? If its started naturally fermenting, then them...

    Ideas for my next step?

    Well Its crystal clear, racked into a keg, and the sample was very nice. Not real sweet and a little on the dry side. CO2 at 25 Lbs and try again in a few days. Wifes working on a Cyser recipe for next, got 3 gallons of fresh cider left.

    Dumpers

    I haven't had to dump one yet, but only done about 40 batches. Had a couple that were iffy on flavor, but still better than a Budlight. Had one in a plastic bucket that had what looked like mold on it, but My buddy said rack it off, cold crash and try it... it was fine.

    Best thing to increase gravity of cider

    We picked a couple bushels of Pink Ladys before Thanksgiving, and our fresh batch of juice was 1.056. We pressed out the rest yesterday, and the this is dropped to 1.050.
