I have a few jars of bourbon peaches from a local orchard (Halved, skinned peaches preserved in a bourbon and sugar syrup, with ascorbic acid) and I'm looking for some ideas on how to use them. They're mild and sweet with just a hint of bourbon. I'm thinking of adding the syrup they come packed...
I would think that a 5 gallon batch in a 15 gallon tank would take a while to show external activity. It seems like it would take the yeast a little while to produce enough co2 to fill that space and pressurize it to the point of forcing excess through an airlock.

I'm a big fan of River Horse, out of New Jersey. They had just started selling their Chocolate Oatmeal Stout out of the brewery when I was there a month or two ago, should be more widely available now. Their Hop Hazard and lager are pretty tasty as well.
