Hey guys, im going to brew a witbier soon and heres my recipe:
2.5 kg Pale ale malt.
1 kg German pilsner malt.
1 kg Wheat
0.2 kg munich malt.
0.2 kg caraMunich
30 g perle hops (60 minuts)
15 g saaz hops (15 minuts)
15 g saaz hops (1 minut)
1 bag of dried T-58 yeast
OG: 1.054...

2. If i let the 1st fermentation go for like 3 weeks instead of botteling after 2 weeks or when i get to my wanted FG, will i still be able to get a similar final product like after a normal 2 week fermentation? If yes than what action do...

2. If i let the 1st fermentation keep going, and it has passed the FG i wanted (for example i wanted 1.013 but got 1.008 all because i let it lay for a longer time...
