    Wild beer roll call

    finally got over my fear of the pellicle and brewed up a batch of 71% pils, 14% wheat, 14% cane sugar with wyeast 3789 that i plan on a long secondary on mangos a la niquejim's drunk owl mango. bubbling away happily in the primary right now. not entirely hardcore wild, but i'm dipping in a toe.

    Sweet Orange vs. Bitter Orange in Witbeer

    bitter tends to be the traditional route, but i love fresh grated zest in my wits. either way, you should get a tasty beer.

    Funky Tripel

    i use 1214 fairly often and it seems to be the rare case that it swells much if at all. still, never had a problem with it doing what it needs to do. in short, i wouldn't worry about it.

    Wyeast 1098

    1098 works great and is the cleanest of the british yeasts i've used and i have a lot of love for it. personally though for ipas i prefer wyeast 1028...i just like the minerally profile against the bitterness of the hops. personal preference, though, nothing more...in short 1098 will turn out...
