    as long as it complies with your state brewery laws and the TBB ok's the site you can brew professionally anywhere. All you have to do is go through all that paperwork.

    Better Bottle blowoff tubes

    this may work for you. The LHBS I used to go to in Seattle used a bit of larger diameter rubber tubing to seal between the pvc and the carboy opening.

    I believe the main reason for the NEMA is for the water proof aspect. No matter what you do to the wood it won't be as liquid resistant as the NEMA, and as much as you are going to spend on control components the idea of it zapping out because of liquid the NEMA just makes sense.
