Well primary fermentation had kicked off last night before 4 (which is when I felt it was cool enough to remove from the kegerator). Today I woke up to a happy bubbling better bottle. So far everything looks healthy and smells correct, so I just might have lucked out.

So I was making my first lambic today (I decided to go with the Steve Piatz recipe) and it was crazy hot outside. I got everything done but I couldn't get the wort down below 120 or so (good old texas). So I figured that since I was throwing in another 2.5 gallons that I didn't boil...
This question is for those of you that have built one of these systems.
I am planning on using one of these to convert a freezer to a kegerator and was wondering what the sensitivity is on the unit. Will it be constantly turning my compressor on and off or does it not kick on until it breaks...
I don't have "little ones" yet, but I do have 2 dogs. That's why I'm going with the coffin and not the collar design. I am fighting off the urge to go with the picnic taps to start out. I assume that if I start with them, I'll have no motivation to ever buy and install real taps.
Howdy all. I think that I'm finally ready to start working on my keezer build. I have a couple questions first though.
1) How much depth is everyone putting in their coffin to allow for the shanks and hoses? Right now, I am allocating 4 inches. I will likely be using the 3/4" insulation...
