Malkore's (not so) Ancient Orange Mead

Looks like this is my weekend project. My question is, I was going to stick to the original post and make 2 gallons. All I have are 5g carboys. Will this be any problem for a primary having that much headspace? I mean, I could go out and buy 3g carboy, but I feel it's pointless. I do have...

    It's ready!

I used Austin Home Brew's extract. I think it tastes a little lighter then a real #4. I got one in the fridge, so after mine, I'll pour a real #4 to see. But in general i'm happy that it turned out well. Makes me want to do another brew later on. But next in line is some Mead.

    It's ready!

Popped the top, nice hiss. Poured into glass. Good carb. Lot's of tiny little bubbles. It's a little darker then Fireman's #4. Just about to sit down and give it a try. This is my first batch i've made.

    Joe's Ancient Orange Mead

I'm gonna give this 1g batch a try after I move this weekend.

    how much does brewing smell?

I didn't notice any nasty smells when I did my first brew. Though the smell of hops is really was really nice and def smelled that when I was putting those in.

    First extract brew.

Already in bottles.. I'll do another brew after I move and do a few things different that time around.. So just let it go in primary next time around? I really want to get a 6.5g glass carboy. Don't like the bucket. I like to see everything happening. I do have a 5g caraboy, I guess if I...

    First extract brew.

I cooked it up on the 14th I think. Moved it to secondary on 20th. I was checking SG while in the primary and it seemed to have fermented quickly. I checked SG the fri/sat/sun after I brewed and my SG was at 1.010. My random readings during this week were all the same. I misread it last...

    First extract brew.

So, this is my first extract brew (Real Ale Fireman's #4). Got my kit from AHB. I know the instructions say after primary let it sit in secondary for 5-7 days to help clear. Now when I look at my carboy with a flashlight on the other side, I can def still see stuff suspended in the beer and...

    Cider, next question.

So really, can I just let this batch sit around and settle w/o adding anything to it?

    First brew..

My sink is pretty small, so I'd only get around 2g of water in my sink around the pot. Took forever..

    Cider, next question.

I think I pitched enough yeast.. I got in enough yeast for a 4 gallon mix in my 1 gallon bottle.

    Cider, next question.

I don't recall the numbers, but it was saying 11-12% ABV.. Which I think is way off.

    Cider, next question.

So I let my cider go a week in primary and racked off to secondary on tuesday. I'm getting little/no activity in my airlock and the taste leans towards the yeast side. I was thinking about adding some brown sugar into the mix to get the yeast going again. Any opinions on that?

    Growlers

I found some last night. Was like 4 for $40 or so. I can't find the link right now but I do think I bookmarked it at home. Will check that tonight when I get in.

    First brew..

So, yesterday being payday I had a chance to get some gear. I got my kit and friend of mine gave me some other parts.. Few things learned.. 1) I want a stool in the kitchen to sit on. 2) Wait till the weekend to do this. :) 3) My sink sucks and I need to make a DIY chiller. Lets hope...
