Three weeks after adding AE in the primary it only dropped to 1.004 at 65 degs. Odd. I kegged it anyway as I need to take it to the homebrew club meeting. We shall see how it tastes. The color is perfect.
It is yeast. Don't worry about it. Rack under it and all will be good. 05 is very similar to Kolsch yeast. Kolsch yeast is sticky and gooey but it rocks.
I skipped AE on my third batch and it was too sweet for the style. I think it stopped at 1.07. I wanted to see what it would be like without AE. That was a mistake. On this batch I just pitched the AE at 7 days and will let it sit for two more weeks before kegging.
I add AE after a week in the primary. Let it sit for two more then keg on week three. Never had clarity issues. I stopped using a secondary three years ago.
After the first batch, I added .25lb of Crystal 10L to mine as the color was very light. It looks perfect now. Just made my 4th batch last Friday. Will add AE this Friday and keg in a couple of weeks. Just in time for Memorial Day. Even better at week 5.
I want the recipe as well. Perhaps the taste is similar to Guinness cause it uses the same hops and yeast. Just a guess. I know the Austinhomebrew has a kit and their beers get pretty close. I might pick it up. Their grain bill lists 9lbs of base and .75 of special.
It spent 3 weeks in the fermenter and 3 weeks at 38 degs in the keg. I carbed it the last 5 days. Took it to the homebrew club and got 2nd place. It is 7 weeks old now and just getting better.
I followed the recipe, except I used all Hallertau and mashed at 153 and used a pack of S-05...
