    My cider smells, can I move it?

    Before I try my next batch of something similar I plan on getting an activated charcoal filter to put over the airlock. Supposedly that takes care of the "emissions".

    Get ready for the rebirth of cider in America.

    I was at their brewery in October. From the little bit of brain picking I did I got out of them that they use an ale yeast for their cider. It's similar to Original Sin, maybe a little sweeter. Not bad, but nothing amazing.

    Ninja Yeast

    According to LHBS Wyeast Eau de vie will consume 24lbs of sugar for a 22%+ batch. It was still going at that point apparently. I'm sure it tastes like absolute jet fuel though.

    Graff (Malty, slightly hopped cider)

    Mine was in the primary for 3 1/2 weeks and four weeks in the bottle. It cleared nicely by that point. It's just over nine weeks old now and is quite tasty. I used right around 50/50 of Motts and Apple & Eve. Just under a half ounce of 6% AA Cascades and I think the flavor is great.

    Started mine on 10/6. Cracked the first bottle last night. Delicious. Slightly over carbed, but that was my fault. 1/2oz of Cascades in mine.
