If you are doing a weldless setup like kal has with the washers and silicon gaskets etc you need to remove the rubber gasket on the element. Not sure how you are doing it so its hard to say.
Depends... With the pfet in place, the brewpi will turn off the display after 10 minutes. Tapping the encoder will wake it back up. Without the pfet the display will be always on. It's up to you if that matters.

Thanks for the answer. Looks like the BSS84 pfet only comes in a SOT23 package. At least thats all i'm finding. Now to figure out how the hell I'm going to use that.... :)
Your schematic shows wires going to pins 1-6 and 11-16 on the display but then the last diagram with wire hookups shows 2 wires going to 14 and no 4. Is the rightmost 14 supposed to be a 4? I know this is probably tedious work and thanks again for the work you have done.

If you know how the bottom of the Blichmann pots are they have sort of a stepped bottom that a false bottom can sit on. About half an inch high. The center of the hole for the element is 2" from this step.
