The nitrogen doesn't go into solution at all, that's why you have to run beer gas when pushing through stout faucets at those pressures... trying to push through a stout faucet at 30psi CO2 would result in glasses of pure foam, and TONS of purging required to take it back down, as all that CO2...
Well, something that really annoys me is being quoted out of context. Since your mis-interpretation of what I said and how I said it directly impacts the validity of your assertion that I was 'telling you what to do', it would appear that this ain't Burger King, and neither of us are getting it...
This thread reminds me of why I rarely have the stomach for hanging out with "beer geeks" in real life anymore... seriously people, if you've really got nothing better to say than "I can brew better beer than DFH" or "all their beers are 'meh'", then just leave and find a thread about something...

They have something like a couple of dozen taps of stuff you don't see anywhere else... always lots of boutique offerings from places like New Holland, Stone...
It's been my experience that there are two types of "beer geeks":
1) Those who spend the majority of their time talking about how amazing and awesome beer is, and
2) Those who spend the majority of their time looking down their nose at 99% of beer and talking about how much beer sucks...
Well... Maris Otter isn't *exactly* the same as brewer's 2-row or American "Pale Malt". They are a bit different... Maris Otter is English pale malt, and has a noticeable "breadier" taste than american pale or plain 2-row...
