    Just one thing with lychee juice... often when you buy em off the shelf in supermarkets, the flavor is pumped up with too much essence. That makes the wine taste like sugar alcohol with essence. :( So try and get your hands on something with no added flavors. Good Luck! Keep me posted on how...

    Man, I love Apfelwein

    I just put one 2 inch stick in there and let it be for a month. You should try this on your own though, as the strength of cinnamon sticks differs in different places. I am from India and I thought that this one was particularly weak.

    Cold Fermenting

    How long did it take for your white wine to clarify before the first racking? I personally found steinberg to be a little slow. My batch was fermenting at 28. Please let me know how things turned out.
