    What do you do with your beer?

    Set up... 8 gal pot, wilser bag, stove top, usually 3.5 gal batches, occasionally a 2-2.5 gal if I'm trying something I'm not sure about. I brew maybe once every couple months. What I do with it... Bottle it all, and my wife and I drink most of it over a couple month period. Very occasionally...

    I have skimmed the thread, but haven't read it all yet... has anyone un-hefe'd this hefeweizen? I'm interested in trying the recipe, but I'm not a big fan of hefeweizens on their own... if I just used a clean yeast instead of a hefeweizen yeast, think this would still be a worthy brew? Edit...

    I put two bottles in the fridge after two weeks conditioning, and a day later,poured one to check it out. The glass was empty in record time and I proceeded to pour the second bottle. Damn good beer. I'm leaving the rest for one more week before chilling, but seriously... This is a tastey...

    I brewed this recipe for my first time last weekend, and today I took my first hydro sample to see where it's at (assuming its at fg). Mine has dried out to 1.006, so a few points low... But that's typical for me with most of my brews (Never really have figured out why). I figure my palate...

    How to add permanent volume markings to a kettle (illustrated)

    I did mine with room temp water, and I just recognize that the volume will read a little higher at hotter temps.

    I'm not a water chem expert by any means, but don't worry about matching the bicarbonate, it's not important to the profile. Only add bicarbonate if you are trying to counteract a too-low pH.

    I just took another reading of my warm-fermented dunkel, and got same 7.6 brix (1.017 as per calculator) reading. This time I decided to take a full sample to confirm with the hydrometer and got a 1.018, so... looks like this Dunkel is done! Will just be a little fuller body than intended lol...
