    the yeast I got was quite clean. I believe it was laid on it's side and separated a bit, but it was all useable. I was able to split into several starters....and yes, these guys rock!

    no, I had this in the primary for about a week, then racked. You could add your hops to the primary and avoid a secondary all together, it's a cloudy beer anyway. The problem I have with that is it makes it a pain to harvest my yeast from the primary and I want to be able to use this yeast again.

    should be fine. I didn't dry hop for long. Only a little less than 2 weeks I think. Took a little time in the bottle to condition though, so make sure you bottle well before your party...like now would be good.

    okay, made it to the brewery today and picked up a couple growlers. Here's a side by side pic (mine's on the left): Surprisingly, mine turned out lighter than Manny's. While it was in the carboy, I thought for sure it'd be darker. The hop schedule and aroma for my extract recipe is spot on...

    I'm in agreement. I love my hops, but when it comes to IPAs, I tend to shy away from the lighter, clean finish IPAs and lean more towards something with some malt backbone.

    that's gonna be a mouthful of beer! Really bitter, but lots of malt backbone too. I think it will be okay as long as that's your preferrence. I personally like darker IPA's, but there's a lot of folks who might be put off by such a bold beer. I guess it depends on your crowd ;)

    I guess I didn't realize this was an all grain kit. I was thinking this was a crappy pre-hopped extract kit. My bad. I still would recommend a boil though if clarity is an issue.

    you could try irish moss or other clarifying agents during the boil and gelatin later on, but I've found that time does the most to help with that. Also, when I transfer my wort from boil pot to primary, I pour it through a strainer to help get any sizeable particles out.

    I haven't tried Freemont's, but thanks for the tip. I'll definitely put that on my to do list. BTW, my recipe has some fizz now, but still tastes a little green. I'm going to have to give it some time, then grab some Manny's for comparison.
