    I just checked back on my notes: brewed Sep 3, bottled Oct 17. I left it in primary the whole time. I have never had clarity issues because I use the best brewer's ingredient of all; time. I'm in no rush to get the beer to glass because I've always got something "ready" in the pipeline...

    I brewed it last year on Sep. 3. It was very drinkable on Christmas, and was actually quite a hit. Thanks to the OP. However, it was even better at the end of Jan, so get brewing!

    The moment you realize your thermometer is broken....

    I just discovered my thermometer was off too, by about 15-20 F as well. I've been wondering why my numbers were off and the beers were sweet, I'd been mashing WAY too high. Out to get a new one. (fingers crossed)

    jtkratzer - thanks. that's what I thought. The OP mentions a 10 day chill, which seemed to me a cold crash for clarity, rather than a shortened cold condition for flavour. Wish me luck.

    Using San Pellegrino bottles

    I have successfully used them with the metal caps they came with. The only problem was that the caps can get warped when saving them for reuse. I found that standard 2L pop bottle lids fit on the bottles just fine.
