i'm assuming you've used a carboy brush with no effect. i would try the suggestions listed above, but if they don't work, i would not use the carboys for fear of infectious organisms taking up residency in the etches.
any idea what the carboys were used for? might have originally held...

other than that batch , i stick to corn sugar. its cheap as long as you don't buy single batch measurements for $.75-$1.00. 5lb bag from my overpriced LHBS for $5.50 will prime alot of batches...and it doesn't turn into a rock if it gets a...
btw, i've never boiled my slurry bottles/jars. just soaked them in a strong solution of iodaphor...probably 4-5x recommended strength
lately, i've been washing my yeast. i boil my water to remove the oxygen, but i still just sanitize in strong iodaphor. no problems as of yet with 4 batches...

how to tell on the fly? other than i microscope, i don't know any tell-tale signs. a starter is the only definite test i can perform.
i'm no expert, but i had an 10oz jar of wlp400 wit slurry hanging out in my fridge for at least 6 months...

ya, i've been doing full boils with 3-5lb of grain in a bag then adding LME. started off using partial boils, but it seems like full boils are more consistent, have better hop utilization, and light colored ales come out lighter than those i did with partial boils.
so the zapap LT works...
