    Seems like it would ferment dry at 7-8% and restart when adding the 2 qts. Have you tried adding a non fermentable sweetener after racking?

    Multiple weeks at the same reading says finished and ready to rack. Did it retain some sweetness or taste dry?

    I have not tried watermelon but I don’t think it carries a lot of flavor. I would be sure to add more after racking.

    Serviceberry

    Our spring was terrible for pollinating. Our serviceberries produced four fruits, so I left them for the birds. Glad you got some to freeze.

    I have a 1 gallon mead I forgot in the primary. It has been almost 5 weeks.(I really need to set alarms in my phone!) I used red star premier blanc yeast. OG was 1.126 Racked today it was 0.996. The chart says 17.06% ABV. It doesn't taste too bad, just slightly dry. I need to make it sweet, like...
