Thanks Bill! I greatly appreciate your support! Chris

    Underpitched yeast

I think that's a reasonable course of action...after giving the beer 2 to 3 weeks in the primary. You can ferment the secondary warmer than the primary (the beer's character is pretty well set after the first week of fermentation), and I'd shoot for around 70 to encourage fermentation. It may...

    Bucket v.s. Carboy

I also carry that bucket that's sort of clear...from Brewcraft. Would be happy to ship them all to you guys...check out the 10% off ad on this forum!

Third attempt and still no good!

Hate to tell you this, but OneStep is NOT a sanitizer...just a cleanser. I think many folks are tricked into thinking it is due to the clever name that could be construed to mean both cleaning and sanitizing. And if you don't believe me (as often happens...) check their website...no mention of...

    Fermentation

Absolutely not! This is not good advice, for several reasons: It will thin the beer, lower the OG and alcohol, possibly introduce bacteria, definitely introduce oxygen...enough said. You will lose more volume by transferring to a secondary, as well as all the risks others have already...

    Bucket v.s. Carboy

Now that I AM one, I can assure you that the prices you pay at your LHBS are not the fault of the owner (in most cases). Wholesale prices, shipping, rent, etc...add up fast. Believe me, most of us would LOVE to lower prices, but we can't!

    Bucket v.s. Carboy

So...if that's the case, Captncully would argue (correctly...) that your bucket is now likely harboring bacteria, as well as odor. That odor indicates that chemical compounds have attached themselves to the plastic...and it's time for a new bucket. Or how about a carboy!?

    Birthday present ideas?

There are a few nice items on sale at our LHBS. Perhaps a huge flask for yeast starters, a stir plate, or a HopRocket...check us out! And have a great birthday!

    Underpitched yeast

I agree with gcdowd...often times the water and wort don't mix well when doing partial boils like this. Now that we know you're true gravity is more likely around 1.051, you may well be ok. So sit tight, let your yeast do it's job, and see what you have in 2 to 3 weeks. Paulgs3: Dry yeast...

    Underpitched yeast

I'd recommend 4 liters. I have some good starter instructions which I tried to attach for you here but it failed. I'll post a link for you tomorrow. Good luck!

    Underpitched yeast

Since this was a high gravity beer, it's pretty certain that you'll need to pitch more yeast after moving it to a secondary. I'd recommend getting another yeast pack and doing a starter (do you know how to build a starter?). Aerate the starter REALLY well, then pitch at hi-krauesen to your...

    Underpitched yeast

You have a couple of reasonable options: Get/grow more yeast and pitch it now or let the current yeast work it's way through fermentation, then asses the situation after 2-3 weeks of fermenting. If it were me, I'd wait to see the results then, if the FG is too high, move the beer to a...

    Bucket v.s. Carboy

Wow guys! So much emotion surrounding fermenter materials! I think the bottom line is that both work fine for homebrewing as long as you understand their respective strengths and weaknesses. Each brewer will make his own decision about which is best for him/her...and I'll always carry both...

Third attempt and still no good!

Norie was right. Ignore the instructions and leave your primary alone for 3 full weeks, then bottle. BigFloyd also nailed it when he says the yeast need time to clean-up their early fermentation byproducts. As I always tell my customers, there is nothing to be gained by rushing your beer.
