2 batches, same recipe, different results...what now?

I certainly appreciate the effort in catching all my (myriad) mistakes. I was certainly feeling "ambitious" for my first mead(s). I, like many before me I'm sure, said, "hey, I've made several pretty darn good extract beers with honey...why not a mead?" Then I thought, "if I'm going to do a...

2 batches, same recipe, different results...what now?

Okay guys, Back in November, I had the need for mead. Long story short, I got the idea to make two batches, one to drink clean and relatively young, the other to age in a barrel I have in the basement for a year or two. Wanted to see the different. Went to a local honey place that sells good...

Trying a twist on a Helles, need a little help

I was going to get the stuff to be able to make a 2L (max) starter, since I don't have that already. Already made that mistake once. Made a Christmas Saison malt bomb that I just tossed a developed smack pack into. Bananas. Bananas everywhere.

Trying a twist on a Helles, need a little help

I'd be concerned about getting some of the really spicy/peppery notes that Citra can give if used in dry hopping, and figured boiling them would let those out while bringing in more of the fruit notes. Any thoughts, or recommendations on a different hop to use? I have the specs on what the...

Trying a twist on a Helles, need a little help

Okay guys, I've been wanting to design a Helles, but with some sort of unique twist. I think I have a good idea on one, but I still need a little help, since I know these kinds of lagers are all about subtlety, and I don't want to foul it up. Here's what I have so far: Good Land Lager...

Recipe feedback (before I screw things up)

Okay, so I went and found the Brewers Friend calculator, which seemed WAY more intuitive (and complete). Here's what I got for the Cream Coffee Stout recipe: OG: 1.056 FG: 1.015 IBU: 16 SRM: 40 ABV: 5.4% Also handy with that calculator is it gives you "style match" info. And this result...

Recipe feedback (before I screw things up)

Well, I'm wondering how much it has to do with the calculator. I'm using the tastybrew.com full recipe calculator, and it DOES (so it says) differentiate between steeping and mashing. However, I'm thinking it lowballs the OG, and highballs the IBUs for certain. When I brewed the NB White...

Recipe feedback (before I screw things up)

Okay, so changing the recipe to the following: 6lbs Maris Otter LME (60min) 0.5lbs Briess Caramel 60L (steeped) 0.75lbs Roasted Barley (steeped) 0.5lbs Flaked Oats (steeped) 0.5lbs English Chocolate Malt (steeped) 0.25lbs Briess Organic Munich (steeped) 0.5lbs Flaked Barley (steeped)...

Recipe feedback (before I screw things up)

Hey guys, long time lurker, first time poster. I've got a couple beers under my belt so far (first, NB White House Honey Porter, turned out great; second, NB Saison de Noel still carbing), and am ready to get some of my own recipes going. I've come up with a couple, picking up inspiration...
