Usually takes a couple of days for the liquid to fully absorb the C02 once its cooled down. Did it have any carbonation at all to it? If so I'd let them carb another week or so. Usually takes care of the problem for me. Also, you may want to try batch priming when bottling. Makes the carbonation...
I use both. As for my glass ones, they all have the brew haulers on them. I do like the glass for the ease of cleaning without worry of scratching the surface, but with careful handling, scratches are easy to avoid on plastic.
The honey and brown sugar likely dried it out a bit more than you were expecting. I usually add Lactose to my chocolate stouts to add a little sweetness and body, so it doesnt end up so dry.
Nothing at all wrong with using an aluminum pot. Clean it with a mild detergent, with a soft sponge. Been using Aluminum pots for a long time. with the money spent on SS, I can buy alot of much more useful equipment.
Just pulled a sample out of that baby and it actually tasted really damn good. The gravity is at right around 1.010, and its crystal clear. Gonna throw this in a couple of bottles tomorrow and carb it up!
I doubt you'll have bottle bombs, unless you used an abnormally high amount of priming sugar. Ill agree you left alot of beer in that carboy. looks to be a gallon or so.. Bottle that up!
