I followed the JAOM recipe and ended up with a dry mead that was about 15% alcohol. Of course it was my first time and I didn't really know what I was doing...
Test tasted both batches tonight and they are both coming along great! The cherry Mel actually tastes like a rosé and is already at 10% abv with a reading of 1.020 from an original reading of 1.096 and I am only a week in!

As for sugar content that makes sense. I will try to keep it around the same sugar levels of most juices.
If I do a JAOM style n/a mead I think I will steep the spices with the water and honey then let it cool and bottle. Then sweeten...
