    Is my beer ruined? Frozen raspberries smell like crap

    I let them thaw. And all three packages (2 from different stores and brands), smelled the same when I opened them. I don't think they went bad. I know sometimes raspberries have a strange smell to them. I'm just worried they are going to make the beer taste like crap.

    And when I say plan on doing, I mean started doing today. I just turned on my keezer for the secondary fermentation of my raspberry wheat and plan on just cranking the temp down after kegging.

    I would take your wheat beer recipe and just load it up with blackberries. There is a local brewery here in Reno that has a blackberry ale that taste like those carbonated fruit juices you buy at the store.

If you put you a yeast like a ale yeast in there that have a low tolerance for alcohol, like only 7 - 8% and then have a huge starting gravity you will have more sugars than your yeast can ferment so it wont go dry it will hit that alcohol range and then stop...

    I've never done this before, but I would just use a wyeast california ale yeast or wyeast pacman yeast. Sounds like fun. I sure wish I could easily get enough berries for that type of project.

    I was just planning on racking to my keg after secondary. If one week isn't long enough should I do two weeks in the keezer to keep it from fermenting the raspberry sugars out? What do you think about cutting it down to 3 - 3.5 pounds of fruit?
