    could but the boil also helps concentrate the wort when we brew. I just did an american IPA and did a small FWH and then hopped the heck out of it in the last 20 minutes. I did 3 ounces at zero minutes

    Thank you for the reply. I have read that a lot of head space for secondary is no good because of oxidation. The demijohns hold 13 gallons and only 5 gallons would not be close to filling it.

    Tasting in Lautering

    I am unsure, but I think I read John Palmer said to stop at 1.008. I have never tasted to figure out when to stop. Then seems bery difficult unless someone has made a beer a lot of times.

    be patient. who knows what it will turn out tasting like, but it should be atleast safe to drink. Adding something may make it worse. I thought my beer was ruined twice, but it was not.

    I do not think that the type of gas or type of faucet would change the type of beer. My experience is to go with what you think you will enjoy more. If it was me I would use Co2 but keep the carbonation low.

    I would purchase some yeast and pitch to be safe. FYI: You will know if you punctured the bag because it will swell in about an hour. I think the yeast will probably be okay that you pitched, but again i would pitch to be safe

    tiny white specs floating after racking to secondary

    fuzzy does not sound good, but dont panic and be patient. If it tastes bad after it has been aged then it is a problem. I have worried numerous times about my beer during fermentation and it is always for nothing.
