    WLP530 - What a crazy yeast!

    I've noticed it needs a lot of headspace and it takes a fairly long time to finish. Also, the activity tends to cycle for a few days after it gets going - even with strictly controlled temps. It makes great beer, though. It became my favorite Belgian strain after the first batch.

    Does d-rest release CO2 from suspension?

    Colder liquids hold more gas in suspension, so you might just be seeing your beer 'let go' of some co2. Also, you might have triggered an increase in fermentation by raising the temp. Only way to know is to take another gravity reading at end of d-rest. My guess is a combo of the 2. You could...

    I'd make a starter. That yeast has lost a lot of viability since Dec. A second smack pack might be just as old as the first, so you'd still be under-pitching. Besides, a starter would be much faster and cheaper than ordering another yeast pack.

    Is there a fix for a sweet stout that is TOO sweet, or do I dump it?

    I'd age it on oak. The tannins will balance the sweetness. I just did this with a porter that I screwed up and it worked well.
