can i sweeten when i bottle and carbonate?

Oh man, didn't check replies for a couple days and I got 15. thanks everybody! No class tomorrow so I'll probably be checking the gravity and bottling if it's ready. I think I'm going to experiment with doing about the last 1/4 of the batch with a small amount of sweetener, just in case i don't...

can i sweeten when i bottle and carbonate?

I have a 5 gal. batch of apelwein that has been fermenting for about 5 weeks now in the primary. I'd say its bubbling once every 2-4 minutes and it has cleared out quite a bit so I'm planning to bottle later this week. I have made cider before with a similar recipe and it was very dry, which I...

using more cider instead of priming sugar?

Just tried the first one today after 8-9 days in bottles. When I tried a bit before bottling it was mostly dry and sour without much of an apple taste. It is still dry and sour (which I like) but it has more of a distinct apple taste, especially on the finish. So, I think that the addition of...

    your best scotch ale recipe

Well the first one we did was an extract recipe, which seemed to work out nicely especially in our tiny apartment. I checked out your recipe and it looks awesome, but I want something that will be done in a 4-5 weeks so I don't have a scotch ready in the middle of july :)

    your best scotch ale recipe

Just bottled our first hard cider and we're drinking our first IPA (the first brew - it's gooood). Now we want a scotch ale that will keep us warm through January. We have a good brew shop down the road that can provide us with whatever you suggest. Cheers! -marisa

Yeast Question, possible stuck fermentation, Apfelwein

I had the same problem, minus all of the heating and cooling and such. I didn't get any activity for 4-5 days (and the brew shop was closed all weekend of course), but once I repitched it started going crazy within 12 hours.

using more cider instead of priming sugar?

Just an update... With the cider I'm using (28.2g of sugar per 8oz, yum) I figured I need to add about 0.18 gallons (0.68L) of cider using mrfocus' method, so 1/2 gallon is much too much.. Going to bottle tonight, so I'll let you know how it tastes in a couple of weeks :) Also, our first-ever...

    ale yeast for bubbly cider??

Hmmm I don't know, but I'm using ale yeast for my cider that I just started so let's hope for the best. I was told by the local brew shop guy that the ale yeast would be fine and I could add extra sugar in the second stage of fermentation for some carbonation if desired, and it would take longer...

using more cider instead of priming sugar?

I didn't take a reading... oops. Have you tried it before? Does a 1/2 gallon seem reasonable? Thanks for your help!

using more cider instead of priming sugar?

Hi everyone! This is our first time brewing cider (and second time brewing anything for that matter - the first brew is still in bottles) so we're still new at all this.. Everything is going well so far.. my first try with liquid yeast didn't work out AT ALL, who knows why, but I got a...
