    Time may be doing the job of mellowing the apricot. I just tried one yesterday after 4 1/2 weeks and it is much more drinkable, though still overwhelming. 3 more weeks may mellow it to the point where it may even be somewhat enjoyable.

    I don't think I'd ever use anything like that again. But real fruit? For some reason putting a fruit purée in the fermenter makes me think about tasting rotten fruit in the beer or having it get an infection. I know lots f people do it...

    I feel more confused about brewing after reading this thread. I have always steeped in the boil volume of 3 gallons. Given my results, I am willing to try the smaller water ratio.     Using Honey Malt

    So, was it decided? Would it wok for someone to steep, say 6oz of honey malt along with 6oz of crystal 40? I'm thinking of doing that this weekend. What temp should I steep at?

    Adding orange peel/zest and coriander. How much?

    Now when you are talking about peel, you mean the zest of the peel, right? You aren't adding in tr whole peel, are you? Even dried, won't the white part give a nasty bitter taste?

    In my defense, the beer was for my wife. She will not touch it now. This stuff is terrible. It was a really mellow light ale before the apricot extract. The bottle says 6-7oz per 5 gallons. There is no way. I wish I could get a refund from brewers best for the cost of all those ingredients...

    Damn. That sucks. Yeah, it tasted 100Xs better before I added te extract. That stupid little 4oz bottle really messed me up. I should have used maybe an ounce or 2. How in the world did that person use 6.5oz? That's te last time I try a recipe that hasn't been reviewed either.
