    I wound up using this recipe: 3 gallon batch 3lbs Pale Malt Extract 6oz Old Mill Pecan Pancake Syrup 8oz Crystal 120L 2oz Chocolate Malt 1oz Black Malt .5oz Tettnang 60 min .5oz Fuggle 60 min House Yeast It came out GREAT. It's definitely in my top 5 favorite brews ever.

    There are a lot of factors that could change the flavor. His hops might not actually be Cascade, they could have been cross pollinated or the conditions in which they were grown/soil composition could be different than the ones you are accustomed to.

    Cascade/Centenniel IPA recipe critique

    I just toss the pellets straight into the brew for dry hopping. They'll break down and sink to the bottom with the rest of the sediment in a couple of days. Then I just siphon the clear beer off of the top and into my bottling bucket when it's done.

    Pretty much anything brewed with Nottingham can go in a bottle after a week IMO. My favorite extract ale recipe is consistently carbed up and ready to drink 10 days after pitching.
