    When I brewed this, I used grapefruit instead of orange peel. I just cut it into chunks and threw it into the last 10 minutes of the boil, fruit, peel and all. I also fermented in bottles with Honey. It was pretty harsh to start with, with that hot alcohol taste but has really mellowed out...

    I'm confused... Do you want the finished product to taste like the first 15 minutes of it smelled? I don't think your plan to do this will work. Maybe add some honey malt to the mash or honey to the fermentation. I never boil the honey, so you would be fine to add to the primary or secondary...

    I guess this is a pretty nice kit if... - you want mega-high quality - money is not an object You can piece this together for way less $$ by using kegs and stainless braid instead of a false bottom. I think I put mine together for around $150, and that included buying an angle grinder to cut...
