My keezer temperature is not regulated yet so I am force carbing my beer (with the set and forget method) at room temperature (70 degrees) and will later cool the beer.
My question is, what temperature should I use to gauge how much psi to apply during force carbonation? 70 degrees or 40...
I've been fermenting a poorly boiled brown ale for over 1.5 years and finally kegged it. I didn't have hopes that it would actually taste good however I want to make sure there is no potential for physical illness.
Any ideas about this?
I have been using Oxyclean to clean my fermenting bucket, corny kegs and tubing after every use. Is this too frequent? Are there any health issues to worry about?
I need to get a bigger wrench and give it another try. If that doesn't work, I'll try to force the sanitized water up the tube and hope for the best.

I opened the lid of my fermenter briefly today but sealed it back on. Will my beer still be good tomorrow to siphon into a keg? Or do you think that the oxygen has ruined it?

I made a 50' copper wort chiller and the connection between the copper tubing and vinyl tubing is leaking (water-in/sink side).
I used a hose clamp to connect the tubing but it doesn't seem to be strong enough to prevent a leak.
