    I know not to use distilled water and I have been using spring water from the grocery store. I've been staying away from my tap water (Austin Texas) just because. I'm trying to learn the whole process and want it to come out decent, should I continue with the spring water or just go to tap?

    Try Brooklyn Brewery Octoberfest...even though I live in Texas, I seem to be supporting this brewery more and more. Good reusable bottles as well!

    Sorry to attach my thread to yours! But it's applicable to this conversation. I want to clarify in a glass carboy (secondary)...do I wait and let it set in the primary for a few weeks or follow instructions and switch to secondary after first week, then let it go in secondary for another?

    Great! So, one other question... Do I use the finished hydrometer read indicated on the instructions? Sorry very new to brewing...but long time consumer!

    I have a kit from Austin Home Brew and on the instructions it said to ferment in the primary for 5 to 7 days then switch to the secondary after that. My question is should follow the instructions or use a hydrometer to test? I was reading other threads and a little unsure. Thanks!
