    My first AG coming up - Evaluate my process please

    I've seen a lot of methods (including Palmer) that recommend adding water to the grain, rather than grain to water. Is there any real difference? Any reason to do one or the other?

    Off-taste, will it mellow?

    Not drinkable yet. Usually have to get rid of most of the bottle. But I can be patient. At least I have a Kolsch in the bottles that after jsut a week is wonderful, if a little flat. Another week or two and that one will be great.

    OK, so it's been over a month. I've been tasting one a week and it's not getting better. I'm going to keep trying for a few more weeks, but I'm losing hope with this one.

    Bottles in the Dishwasher

    I wash the bottles first. Then run throught the heat sanitizing function of the dishwasher. No soap in the dishwasher, and I also run it empty prior to putting bottles in to make sure that any residues have been removed.

    Carbonation/Conditioning Temperature

    Just put my thrid batch, a BB Kolsch kit, into bottles last night. Is there a problem with storing the bottles at 55 degrees or so? Will the low temperature inhibit the yeast from providing enough action to carbonate the bottles?

    I brewed this one as my first attempt a few months age. It came out wonderful, great flavor. I'd definitely recommend it.

    I agree. And actually I'm switching snaitizers. I was out of the iodophor anyway and the lhbs recommended one-step so I am going to give that a try. Going to try another beer in a day or two and see if the flavor is mellowing yet.

    I agree, and I know that I don't have enough experience to know the difference yet. It's been bottled now for 10 days. I tasted one at 7 days and the flavor was reduced, but still obvious. I'm going to try one each week to try and see the progression of the bottle conditioing. We'll see how...
