Just wanted to update on my mead that was bottled 11/11/11. I had some friends crack open a bottle of it today, and they are all messaging me saying how great it is. I only have 2 bottles left that I kept for myself! :P
I felt the same way at first. But letting it age out completely chanes the flavor profile... Personally I think it's 100x better now. I gave it out at Christmas gifts to friends last year along with wine bottles of skeeter pee and told people not to open the mead for 8+ months. Around last month...
Just wanted to say I cracked open a bottle of this that I have had sitting since 11/11/11 and it is DELICIOUS. The grape flavor and hotness have mellowed out so much since then. Can't wait to crack open another bottle a year from now!

You can certainly carb the cider. When bottling add the carb drops, and let them sit like you normally would.
I would recommend cracking one open each day to find the right carb level. Once you found the right amount of carbonation you can throw the bottles in the fridge and keep them in there...

Got 2 1gal batches going now, started 10/31.
Trying out EC-1118 and 71B-1122 yeasts, in 3 hours they were both bubbling away happily.
