For those of you interested in the new certificate program being offered at UCSD you better be prepared to be disappointed. The program seems to be on the right track but the person overseeing the program is so disorganized that its going to have some clear issues.
The tartness of the beer is derived from the acid that exists in that fruit. Once the yeast has continued to do its Jon which is to ferment the sugars from the fruit, all that's left is the acid from that fruit. It's hard to determine how much you will get. Did a Cherimoya Wheat and left the...
Yeah you only need the zest of the orange. The additional sugar from the wedges will increase your alcohol but the acidity will stay behind as well. In other words, don't be surprised if your beer is tart. If you want that orange essence, next time makes these additions in your boil. And add...
When I've made unblended lambics, I rack my base beer to a "sour only" bucket before pitching my sour blend. Since a sour is typically supposed to be more flat then effervescent I wouldn't add additional yeast because you don't need to carbonate

I could make money from this. The rentings of Jeff the all knowing. Thanks guys. Dropping off samples for a BJCP blind review of Oktoberfest beers right now.
Cheers respected brewer and his sidekick

Going to start an IBD certificate course next month to see if the Brits do it any differently.
Drink away!
***You have every right to believe what you want. No one will stop you from saying what you want to say. I just figured that I had to dum it down for you. If you wanted me to get technical with you, you should have just said so. If I read your posts correctly, you brew, you place your carboy in...
I think the advice was that if you did everything right, your 1 vial of yeast should be perfectly fine. The starter is only intended to start fermentation faster and increase the number of cells. I've been actually doing a two yeast strain combination with nice results. I'll track down what...
