    so what to do.

    In case anyone else had this smell and read this thread the hydrogen paroxide worked magically. Added one cap full of 30% hydrogen peroxide and within a couple of days the smell and taste were gone and only the wine was present.

    Commercial is cheaper. I think I will call some of these "sugar shacks" here in the area. I wonder if any one has a hook up here in maine on this sight. It would make things easier.

    So I've been kicking an idea around in my head and searching the internet and can't find a recipe for a maple syrup wine. Any ideas or have anyone tried it. Its not even on jack keller's infinite recipe list.

    You can buy clearifing agents also form your local brew shop. Im not traditional like most I dont mind adding chemicals to clear it up. Plus i'm impatient! :)

    I ate some even with the dark mold. Tasted good a slight vanilla tasten it has the consistency of oatmeal. Not as sweet as the smell. Plus im not sick.

    Increased the temp to about 90deg and it liquified a bunch over night why is everyone cooling the rice down during fermentation. Am I screwing something up. I have lots of black green mold now but it smells super sweet.

    So I ju mped on this yesterday and boiled the rice instead of steaming on the recomendation of the guy that ran the asian market. Says the mush left makes great rice pudding anyone tryed that yet. And do you think the boiling will have a negative effect? 3cups sweet rice and 2 white yeast...
