Check the stlbrews website. They have had many discussions about our water. I use tap water all the time.

Deep Ellum Brewing is great. Their new head brewer is from Dogfish Head, and their former head is from St. Louis. The original recipes where solid, and have been improved upon.

WOW just read though this whole thread. My SWMBO would KILL me if I tried this project. She already hates that I horde beer. I love seeing what others are doing to feed this hobby!!!
